in
order for a paella to be delicious in the middle of the year 2001, it has
been neccesary that, for centuries, the secrets of its preparation have
been transmitted. This allows us not only to taste it, but also to avoid
dying by being food poisoned. The same process of transmission of knowledge
makes possible the manufacturing of guns that are gauranteed to shoot,
and therefore, for sure if grasped and aimed correctly. "the people's memory
is what we call culture", o "Culture is people's memory". Thereís culture
of products and culture of use. The transmission of knowledge that operates
through culture has progress as an outcome, of which the culture is a blind
tool. Each culture accumulates its experience to the most and this usually
includes various systems of extermination and a studied contempt for other's
extermination systems. This can also be applied to gastronomy. Progress,
understood as a job of control and dominion of nature cannot be stopped
but is also irreversible. Its consequences can easily be seen. Culture
and progress oppose themselves to civilization and evolution. One cannot
talk about a Human Civilization in which all human beings donít fit. Nowadays,
Humanity composes itself of different cultures, some of them absolutley
incompatible with others and many, incompatible with the very concept of
survival of the species (not to say the other species). If we conceive
the possibility of evolution for our species, itís neccesary to consider
that there can't be an evolutive step until each individual has reached
it. Such a coincidence of objectives can only be given in terms of civilization
(and not of civilizations) and this implies a transformation of culture
as difference in culture of difference first, and its dissolution in the
fields of art.
